Introduction
Prof. Yen-Po Chen is currently assistant professor in the Department of Animal Science at National Chung Hsing University. His primary teaching and research areas focus on dairy processing and probiotics.
Our lab, the 'Laboratory in Milk Products and Microbiology,' focuses on milk and probiotic research.
Currently, we have 4 Ph.D. students, 3 master's students, and 8 undergraduate students.
Our students come from various countries, including Ethiopia, Türkiye, and Thailand, among others.
Research Topics
- Investigation and application of milk fat globule membrane and milk exosome
- Development of novel milk products
- Isolation and evaluation of probiotics from animal products
